Do you love mixed drinks, but not the calories you get from them? This Skinny Strawberry Pina Colada will let you enjoy this fruity cocktail, but not fill up on extra calories.
I love fruity cocktails, especially Pina Colada's and anything strawberry flavored. What I don't like is how many calories you consume from many frozen cocktails. You could consume over 300 calories from just one drink!

Traditional Pina Colada's are made with coconut cream, pineapple juice, and sometimes heavy cream. Add in rum and you have quite a calorie punch. This skinny strawberry pina colada uses low-calorie coconut milk and fresh fruit to decrease the calorie content, increase the fiber content, and improve the nutrition quality.
Of course, you can easily find already made mixes for Pina Colada's. Mixes do save time, but they contain a lot of artificial ingredients. By using fresh ingredients you have a drink that is definitely a better choice.
I have eliminated the pineapple juice but replaced it with some frozen pineapple pieces. You still get the flavor, but now have added fiber and nutrients. Frozen strawberries are a much better option that strawberry syrup. Finally, to make up for the missing coconut flavor and texture of the cream I used both coconut milk and coconut flavored rum.
Malibu rum is one of my favorite rums, but for some may not be strong enough (my hubby!). Not me! You can use one part Malibu and one part dark rum if you wish or just stick with the Malibu. The drink is yummy either way.
The frozen fruit will give the cocktail I nice texture, however, I add extra ice to get the drink extra cold and frothy.

Skinny Strawberry Pina Colada
Ingredients
- 1 part Malibu Rum
- 1 part Dark Rum
- 1 cup coconut milk
- ½ cup frozen pineapple
- 1 cup frozen strawberries
- 1 cup ice
Instructions
- Place all ingredients into a blender in the order listed.
- Blend until smooth.
- Serve immediately!

Sounds great, but I'm disappointed that the calorie count isn't listed. I wish they were 0 calories!

Can you make this with out the rum ? Would you need to substitute the shots of rum with more coconut milk?
