Baked Summer Squash with Gruyere

  • 2 small zucchini sliced
  • 2 small yellow squash sliced
  • 2 cloves of garlic minced
  • 2 teaspoons olive oil
  • Splash of white wine
  • 1/2-1 cup of gruyere up to you how cheesy you want the dish


  1. In a saute pan heat oil over medium heat.
  2. Add garlic and cook for 1-2 minutes.
  3. Add sliced squash to the pan. Saute for about 5 minutes until tender.
  4. Add splash of white wine and cook for another 2 minutes.
  5. Place squash into a baking pan.
  6. Sprinkle with gruyere.
  7. Place squash in a preheated 350 degree oven and bake until cheese melts.
  8. Optional: broil for a few minutes to brown the cheese.
