Easy Baked Spinach Artichoke Dip

Spinach artichoke dip made with fresh spinach is an easy dip perfect for any party.

Ingredients
  

  • 1 teaspoon Olive Oil
  • 1 clove garlic minced
  • 5 ounce of fresh spinach 1 bag
  • 1 10 oz jar of marinated artichoke hearts
  • 8 ounces low-fat cream cheese
  • ¼ cup light sour cream
  • ¼ cup light mayo
  • ¼ cup shredded parmesan cheese
  • Pinch of sea salt

Instructions
 

  • Preheat oven to 350 degrees F.
  • Heat olive oil in a skillet over medium heat.
  • Saute garlic in olive oil for 1 minute.
  • Add spinach to skillet, saute until wilted.
  • While spinach is cooking cut artichoke hearts into bite sided pieces. (save marinade)
  • Add artichoke pieces to skillet along with 1 tablespoon of artichoke marinade.
  • Place cream cheese, sour cream, mayo, parmesan cheese, and salt to spinach artichoke mixture.
  • Heat until sour cream and parmesan is melted.
  • Place spinach artichoke dip into a baking pan.
  • Bake dip until bubbly, about 10 minutes.
