Low Sodium Sheet Pan Chicken Fajitas

Sheet pan dinners are all the rage! Easy prep and clean up make cooking dinner a breeze. These Chicken Fajitas can be ready in just 30 minutes.

  • 2 lbs chicken breast tenderloin each sliced in half lengthwise
  • 1 green pepper sliced
  • 1 red bell pepper sliced
  • 1 vidalia onion sliced
  • Olive oil spray
  • 1 tablespoon olive oil


  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried cilantro
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper


  1. Preheat oven to 350 degrees F.
  2. Coat a sheet pan with olive oil spray.
  3. Spread pepper and onion slices onto prepared sheet pan.
  4. Place chicken slices on top of vegetables.
  5. Combine seasoning ingredients and stir to combine.
  6. Sprinkle seasoning mixture over chicken, peppers, and onion.
  7. Drizzle 1 tablespoon of olive oil over chicken, peppers, and onion.
  8. Gently toss ingredients to evenly distribute seasoning and oil. (make sure chicken strips are not overlapping)
  9. Bake for 20 minutes or until chicken reaches 165 degrees F.
  10. Serve in warm low sodium tortillas.

  11. Top with your favorite toppings! I love cheddar cheese and sour cream.
