Slow Cooker Mashed Potatoes

Save room on your stove top by making these mashed potatoes in your slow cooker.

Ingredients

  • 3 pounds small red potatoes
  • 3 cloves garlic minced
  • 1 cup sour cream
  • 1/2 cup skim milk
  • 3 tablespoons butter
  • 1/2 chopped chives
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Grease a slow cooker with butter (bottom and sides)
  • Cut each red potato in half. (Leave the skin on the potatoes if you wish)
  • Place potatoes into the slow cooker.
  • Cover and cook on high for 2-3 hours.
  • When potatoes are cooked through (a fork should insert easily into the potatoes) mash with a potato masher.
  • Place remaining ingredients into the slow cooker. Mix well either with a spoon or hand held electric mixer until well blended.
