  • 1-2 pounds chicken breasts or pieces
  • 1/4 cup extra virgin olive oil
  • The juice and zest of 1 lemon
  • 1/4 cup white wine I use any type I have at home
  • 3 sprigs of fresh rosemary leaves removed and chopped.
  • 3 cloves of garlic crushed and chopped
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper


  1. Combine olive oil, lemon juice, lemon zest, white wine, rosemary, garlic, salt, and pepper into a large glass baking dish.
  2. Add chicken to the dish.
  3. Refrigerate chicken with the marinade for at least an hour.
  4. When ready to grill the chicken discard marinade.
  5. Place chicken on a grill heated to medium-high heat.
  6. Cook for about 4-6 minutes on each side or until chicken is cooked through.
  7. The internal temperature should be 165F.
