Power bowls are all the rage. This bruschetta quinoa protein bowl is back full of protein and fiber.

Bruschetta Quinoa Protein Bowl

Ingredients

  • Bowl
  • 1 cup Romaine lettuce
  • 1/2 cup cooked quinoa
  • 1/4 cup roasted peppers
  • 1/4 cup artichoke hearts
  • 8 cherry tomatoes
  • 2 ounces fresh mozzarella cheese
  • 2-3 basil leaves
  • Dressing
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon pure maple syrup
  • Pinch of sea salt and black pepper

Instructions

  1. Protein Bowl
  2. Chop or tear Romaine lettuce and place in the bottom of your bowl.
  3. Dice cheese into bite sized pieces.
  4. Cut cherry tomatoes in half.
  5. Chop basil leaves.
  6. Add quinoa, roasted peppers, artichoke hearts, tomatoes, and cheese on top of lettuce.
  7. Dressing
  8. Whisk together olive oil, balsamic vinegar, maple syrup, salt, and pepper.
  9. Drizzle dressing over protein bowl and enjoy!
